Easy Homemade Apple Fritters

  • 1 cup all purpose flour
  • 1/4 cup sugar
  • 3/4 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/3 cup milk
  • 1 egg
  • 1 cup chopped apple


  • 2 cups powdered sugar
  • 1 1/2 tablespoon milk


  1. Combine flour, sugar, salt, baking powder, cinnamon.
  2. Stir in milk and egg until just combined.
  3. Fold apple into dough.
  4. Pour oil into skillet so that it is approximately 1 1/2 deep.
  5. Heat oil on high.
  6. Oil is ready when a little dough thrown in floats to top.
  7. Carefully add dough to oil in heaping teaspoons.
  8. Cook until brown, about 2 minutes, then flip.
  9. Cook another 1-2 minutes, until both sides are browned.
  10. Transfer briefly to paper towels to absorb excess oil, then transfer to cooling rack.
  11. Make glaze by stirring milk and powdered sugar together in a small bowl.
  12. Drizzle over apple fritters.
  13. Wait approximately 3 minutes for glaze to harden, then flip fritters and drizzle glaze over the other side.
  14. Best served warm.

Peanut Butter Cup Banana Bread




  • 3 cups all purpose flour, divided
  • 2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 4 Very Ripe Bananas, Slightly Mashed
  • 1/2 cup Peanut Butter
  • 1 cup Sour Cream
  • 2 Eggs
  • 1/4 cup Coconut Oil or Canola Oil
  • 1 cup Packed Light Brown Sugar
  • 1 tsp Vanilla Extract
  • 1 1/2 cups Bite-Sized Peanut Butter Cups, or Chopped Peanut Butter Cups
  • 1 (3 to 3.5 oz) Bar Premium Dark Chocolate, Chopped


  1. Preheat oven to 350 degrees.
  2. Spray two 9×5″ loaf pans with cooking spray.
  3. In a large bowl, whisk together 2 3/4 cups of flour, baking soda, salt and cinnamon. Set aside.
  4. Fit a stand mixer with the paddle attachment. Beat bananas, peanut butter, sour cream, eggs, oil, brown sugar, and vanilla extract for approximately 2 minutes or until well blended
  5. Spoon the flour mixture into the banana mixture and beat on low speed until blended
  6. Toss the Peanut Butter cups into the remaining 1/4 cup of flour (to help prevent from sinking) and stir into the batter along with the chopped dark chocolate.
  7. Divide the batter evenly between the two loaf pans.
  8. Bake for 50 to 55 minutes or until toothpick inserted in the center comes out clean.
  9. Cool for 10 minutes before removing from pans.
  10. Cool completely on a wire rack before slicing.

BLT Stuffed Avocados

Prep time: 10 minutes

Cook time: 12 minutes

Total Time: 22 minutes



  • 2 large avocados
  • fresh lemon juice
  • 1roma tomato, seeded and cubed
  • 1 cup cubed french bread
  • 1/2 cup finely chopped spinach leaves
  • 1/4 cup cooked crumbled bacon
  • 2 tablespoons mayonnaise
  • 2 teaspoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


  1. Preheat the oven to 400 degrees F.
  2. Cut avocados in half, remove the pits, and carefully remove the peel. Rub the outsides of each half with some fresh lemon juice. This will help maintain their nice color. Set aside.
  3. In a medium mixing bowl, add all remaining ingredients and stir to combine.
  4. Stuff the avocados with as much of the filling as you can fit, allowing the filling to come up over the sides a bit.
  5. Place avocados on a non-stick baking sheet and bake for about 120-12 minutes, or until the filling has turned a light golden brown.
  6. Serve immediately.
